
With residency 3, Volcanic Kitchen & Wines enters a new chapter in an ongoing journey through volcanic territories — beginning with our own and reaching toward the volcanic landscapes, ingredients and culinary cultures of the world.
This residency looks towards territories where fire, earth and deep-rooted traditions offer a new perspective on a language we already know well.
Chef Emanuele and Chef Daiyaan continue the conversation through food: beautiful cuts of meat cooked over fire, new flavours shaped by this latest exploration, and a few dishes from the previous residency that have earned their place at the table once again.
Pumpkin season brings back Chef Daiyaan’s pumpkin with homemade ricotta, while Chef Emanuele’s linguine with charcoal-cooked mussels returns after becoming one of the most loved dishes of the last episode.
Around them, Residency 3 introduces new plates, new ideas and new connections between territories.
Because Volcanic Kitchen & Wines was never intended to stand still. Each residency is part of a wider exploration — of our volcanic land and the volcanic territories of the world, of what grows there, how people cook there, and what happens when those stories meet around the same fire.
